Our Philosophy:
We sell cheese that tastes exceptional and is made with care. Whenever possible, we build direct relationships with producers and treat all our vendors as partners. Every cheese in our case has a reason to be there, chosen to represent a place, a tradition, or a style. If we wouldn’t eat it ourselves, it doesn’t make the cut.
We prioritize animal welfare, responsible land stewardship, and the work of small producers. Our mongers know the cheeses intimately and respect the craft behind each one. And we do all of this with a focus on long-term sustainability for the product, for our team, and for our community.
Why Cut to Order?
The St. Paul Cheese Shop and our sister shop, France 44, are two of the only cut-to-order cheese shops in the Twin Cities. As cut-to-order shops, we do just that, we cut your cheese when you order it. That means you always get the freshest cheese at the amount you want. Most cheese counters sell pre-cuts or pre-wraps of cheese, cheese that was cut, wrapped in plastic, and put into the case days or even weeks before you buy it. When you buy from a cut to order shop like us though, not only is it fresh, but you can sample it to know how delicious it is!
